Muffin Tin Monday

I was inspired by friends over at Sycamore Stirrings for Muffin Tin Monday.  I'm not sure if this is quite the same... I have actually served in a muffin tin before, here, and used them in another way here.  However, I wanted to make something creative in one today.  I whipped up some corn muffin batter, and put a dollop in the bottom of a muffin pan, placed one of those mini hot dogs (we had a lot left over from Baby Blue's birthday party, thus me wanting to make something creative out of them), and then covered with more batter.  Once baked, it was my own version of a corn dog... and was very yummy, I must say!  So, I'll do better for Muffin Tin Monday next time, but hopefully this inspired you...
